The famous soba noodle shop “Nakasa” in Gifu Prefecture, Shiroko, is particular about the quality of the soba grain.
They use grain grown in Oku-Hida and some parts of Nagano Prefecture.
Despite its small size, the grain is characterized by its strong aroma and deep flavor.
The cooked soba noodles have a high aroma and plenty of sweetness.
Its unique flavor contains irresistible charm.
The soba is made from hand-made flour using a hand-cranked stone mill and sieve, so there is a limited amount available each day.
It is recommended to visit as early as possible. If you want to enjoy soba in Shiroko, it is definitely a shop you should visit.
