Restaurant features
A restaurant on the second floor of Kanazawa Winery.
Although it is located in the city, it is called a “French Farmer’s Restaurant”. I agree.
It is certified as a Green Star in the “Michelin Guide Hokuriku 2021”, but if you know the backbone, this is also convincing.
It’s not just about featuring vegetables, it’s a one-stop service from production to cooking.
The location is Owari-cho, Kanazawa.
When you think of a winery, you tend to imagine a factory-like atmosphere, but it is actually a townhouse that retains its charm.
When you enter the entrance, the company’s wine is placed, and the stainless steel glass at the end of the stairs is also winery specification.
It’s a restaurant attached to a winery, so one of the best things about it is that you can enjoy pairing the company’s wine with food.
We will start with non-alcoholic sparkling wine.
There are two types of dinner courses, “terroir” (6.050 yen) and “grace” (9,680 yen). In the course of “terroir” that I made bigger.
Rice, wheat, soybeans
Small items using Their own organic ingredients.
Seafood and couscous
Couscous with octopus, red squid, scallop seafood, oak leaf lettuce, and Kagata cucumber salad.
Couscous is tossed with garlic oil.
I use tomato gazpacho like a sauce.
The bread is also baked from their own organic wheat.
New onion
A soup made from onions and may queen.
Using fava beans as an ingredient, it is scented with selfeille.
Assuming that the taste will become stronger with the following fish dishes and meat dishes, the drink is “Kanazawa yuzumitsu with soda”.
Tilefish
The fish is tilefish grilled with scales.
It’s madeira sauce, so it’s a French feeling.
After all, the presence of garnishes such as willow matsutake and asparagus is strong.
The second loaf had a different taste.
It seems that they are also making vegetables kneaded.
Meat dish of the day
Since it was a deer or a duck, I selected Honshu deer.
With our own Muscat Berry A sauce.
Strawberry
Dessert is full of strawberries.
When it comes to Green Star-certified restaurants, the concept of sustainable food is often ahead of the curve, but it was an impressive course that you can enjoy it very naturally.
Having lived with gimmicks, I can’t help but feel dazzled when I see him showing off his individuality without being eccentric.
