Transparent French cuisine that makes full use of Shizuoka ingredients, including game meat.
After all, during the hunting season, the chef himself goes hunting and brings back the ingredients.
When you think of game dishes, you might still associate them with strong local flavors, but the characteristic of this restaurant is its remarkably transparent taste. I believe that understanding how to handle the ingredients, from capture to processing, allows them to capture the pure essence without overwhelming nuances.
This distinctive quality is reflected in their “Game Pâté,” as noted in my memo from my first visit in 2016. Four years have passed since then, and I could see the progress they’ve made in refining their courses and elevating their culinary expertise.
Sparkling Wine
We started with a glass of sparkling wine from the Languedoc region in southern France.
Tomatoes
The amuse-bouche featuring tomatoes consists of three components: mousse, compote, and shaved ice. It appears that they use the transparent part of glutamic acid for the shaved ice.
6 Varieties of Game Ham
A selection of six game hams, including deer, wild boar, pheasant, and duck. The ham is made in-house and aged for five years, giving it a distinctive rich flavor.
Pot Béarnaise
Pot Béarnaise refers to jumbo mushrooms from Fuji City. They are boldly grilled and seasoned with homemade bacon.
White Wine
Beltfish and Sweetfish
Underneath the fried beltfish, there is a sweetfish risotto.
Vegetables
Roasted vegetables. It’s often said that restaurants known for their game dishes also excel at preparing mushrooms and vegetables.
Honshu Deer
Roasted Honshu deer from the foothills of Mount Fuji. The hunting season begins in mid-November, so it was a special occasion for the day.
Game Meat Ramen
Ramen flavored with dashi from pheasant and duck, and garnished with a unique chashu made with chicken thigh meat stuffed with minced deer and wild boar.
Grilled Eggplant
The first dessert is grilled eggplant ice cream.
Hibiscus Grape
A layer of hibiscus jelly with grapes underneath, and at the base, there’s a milk panna cotta.
For post-meal tea, they offer coffee, black tea, and herbal tea.
